Rocky Road without Marshmallows Recipe

This recipe for Rocky Road without Marshmallows was made by my friend Louisa for our book club meeting at hers. The recipe was delicious and a perfect treat after dinner. The combination of chocolate, biscuits and nuts makes the treats crunchier rather than the chewiness you get from Rocky Road with marshmallow. This is a fun, quick and easy recipe to make with young children, teens and adults. The mix of additions can be made bespoke to include your family’s favourites additions of biscuits, dried fruit and nuts.

Sometimes at Easter, you have so many bulky boxes housing chocolate. I used to have a little melting session with the children and we would make a batch of rocky road. It made light work of the Easter Egg display and provided a transportable snack. The squares of Rocky Road were used to snack on after swimming, sports sessions, at picnics and for Friday’s treat in their lunch box.

This is an easy recipe to melt together with young children or if you need a quick to make treat.

Ingredients
  • 300g dark chocolate, chopped
  • 100g butter, chopped
  • 140g golden syrup
  • 250g digestive biscuits, finely chopped
  • 200g pistachio nuts, roughly chopped (or your favourite nuts)
  • 50g cranberries or your favourite dried fruit
Method
  1. Line and grease a 20cm brownie tin with non-stick paper.
  2. In a pot or in the microwave melt the chocolate, butter and golden syrup.
  3. In a large bowl mix the biscuits, nuts and dried fruit.
  4. Stir the melted chocolate, butter, syrup mixture into the bowl with the biscuits, fruit and nuts.
  5. Mix well and press into the prepared tin.
  6. Cool and refrigerate for a couple of hours or overnight.
  7. Cut into small squares and store in an airtight container in the fridge in summer and tin in winter.
Tips
Use your favourite biscuits Rich Tea, Hob Nobs, Marie, Lotus Biscoff etc
Nuts: Almonds, Pecans, Pistachios, Salted Peanuts etc
Dried Fruit: Cranberries, Raisins, Chopped Apricots, Stem Ginger etc
