Pomegranate Molasses Salad Dressing
This is one of my favourite salad dressings, it is thick and coats the leaves and vegetables well and the flavours are different yet familiar. You will always get an ‘ohh, that’s lovely what is in the dressing’? If you haven’t used pomegranate molasses, I urge you to buy a bottle. I have finished mine, by just making this dressing, never mind the numerous recipes that you can cook with it.

Ingredients
- Dressing:
- 3½ tablespoons olive oil
- 3 tablespoons red wine vinegar
- ½ teaspoon salt
- 1 teaspoon dried oregano
- 1 tablespoon pomegranate molasses
- 1 tablespoon maple syrup
Method
- Place ingredients in a jar and shake.
- Serve over leaves of your choice.
Tips
If Maple Syrup is hard to come by, use golden syrup or honey.
Add the dressing to a simple tossed salad or a roasted vegetable salad as shown above.
