A light syrup that can be used as a cordial or poured over pancakes.

Ingredients
1 litre of water
350g golden caster sugar
1 stick of cinnamon
Method
In a pot stir all the ingredients together.
Over a medium heat, slowly dissolve the sugar.
Once the sugar has dissolved allow the syrup to boil for 20-30 minutes until the cinnamon has darkened the syrup and the solution has reduced by about a third.
Cool and use as you wish as a cordial or over pancakes.
There is no need to keep this in the fridge unless you want an extra cold drink if using the syrup as a cordial.
Tips
The recipe can easily be halved.
