Cheat’s Minestrone

This Cheat’s Minestrone was so quick to make. This recipe will become your fav quick working-from-home lunch, family dinner or economical student meal.

I am on an ever-failing quest to clear my makeshift under-stair pantry cupboard. I love ingredients they can easily turn a vegetable or meat into a dish from a far-flung place. But that comes with drawbacks, I stockpile, tins, spices, and dry goods. Exhibit A shown below, the Ratatouille was a lockdown purchase with another year on its sell-by-date. The Baked Beans in tomato sauce were an unwanted addition to the cupboard from my son’s girlfriend’s dad’s house move and the balance of the ingredients are store-cupboard and fridge staples.
Today, I saw the back of the two tins and created a delicious, filling and warming lunch. My husband even asked how it was made, which is rare and usually means he wants to eat it again.
It’s so simple to make using the store-cupboard ingredients shown below:

This is how I made this cheat’s minestrone:
In a medium pot I added the tin of ratatouille, baked beans in tomato sauce, half a tin of water, half a stock cube and a scant sprinkling of pasta, less than half a handful. I simmered the soup for 10 minutes (you can use smaller pasta and simmer for the time stated on your pasta packet.  The soup is now ready! Serve with basil and grate a generous amount of Parmesan over each bowl.
That was it, a delicious lunch in minutes on an autumnal day.
